Cocoa Butter Replacer (CBR) (non-lauric compound coating fat)
Non-lauric coating fat, partly cocoa-tolerant
A non-lauric fat made from fractionated and partially hydrogenated non-lauric oils such as palm and soybean. Its triglycerides differ from cocoa butter but it tolerates a moderate proportion of cocoa butter, and like CBS it does not require tempering.
