When purchasing palm oil or palm fractions, the contract should specify the physical and chemical parameters that determine performance in your process. Four of the most frequently checked specifications for first-time buyers are free fatty acids (FFA), iodine value (IV), moisture and impurities (M&I), and colour. Confirming these before shipment reduces the risk of rejected loads, unexpected refining costs, and product that does not suit the intended use.
Free fatty acids (FFA)
FFA measures hydrolysis and rancidity. Higher FFA means more free fatty acids, which can cause off-flavours, lower smoke point, and greater refining loss. Buyers should confirm the maximum FFA (expressed as % palmitic acid) acceptable for the grade. Crude palm oil typically has an FFA of about 3–5%, while refined, bleached and deodorised (RBD) palm oil is usually specified at about 0.1% maximum. For food applications, lower is generally safer; for oleochemical or biofuel use, higher FFA may be tolerable but can change downstream processing requirements.
Iodine value (IV)
IV indicates the degree of unsaturation, which determines melting behaviour and oxidative stability. Palm olein has a higher IV (roughly 56 or above), palm stearin a lower IV (roughly 48 or below), and mid fractions sit between. A buyer needing a stable frying oil may want a lower IV, while a buyer wanting a liquid fraction for blending should confirm the higher IV olein range. Ask for an IV range, not a single number, and match it to the end product.
Moisture and impurities (M&I)
M&I is the combined percentage of water and non-oil solids. Excess moisture encourages hydrolysis and microbial growth; excess impurities reduce clarity and increase refining losses. Most refined palm oil is sold with an M&I maximum of about 0.1%, while crude palm oil may allow up to about 0.25% depending on the contract. First-time buyers should confirm the maximum and the test method used, because a small difference in M&I can significantly affect shelf life and processing.
Colour
Colour is usually measured with a Lovibond tintometer and reported as red and yellow values in a cell of defined path length, commonly 5¼ inches. Refined palm oil should be light; darker oil may indicate oxidation, poor processing, or contamination. Confirm the specified maximum colour (for example, a maximum of about 3 red on a 5¼ inch cell for refined grades) and always check the cell length, because the same colour values in a 1 inch cell mean something very different. For direct cooking oil sales, light colour matters; for further processed products it may be less critical.
Before signing, ask for a certificate of analysis that shows all four parameters against the contract limits. Understand which test methods are referenced, and consider a pre-shipment sample if volume justifies it. Writing clear minima and maxima into the purchase contract—rather than relying on vague terms like “standard export quality”—gives both buyer and seller an objective basis for acceptance or rejection.
