Palm oil delivers a useful starting point for bakery shortenings because it is naturally semi-solid and can be split into fractions with different melting behaviour. Understanding those fractions helps procurement teams ask sharper questions and avoid buying a fat that performs well on paper but poorly in the bakery.
What the fractionation step creates
Palm oil is separated into a liquid olein fraction and a solid stearin fraction. Palm stearin is the structural backbone of many bakery shortenings; its higher melting point provides body, aeration and lamination strength. Palm olein acts as a softening oil and improves pourability and handling. A further fraction, palm mid fraction, has an intermediate melting range and is used where a firmer but still plastic fat is needed.
How a shortening is assembled
Formulators blend fractions to hit a desired solid fat content profile. A typical all-purpose shortening may combine palm stearin with palm olein or a neutral liquid oil such as soybean or canola. The stearin supplies solids at room temperature; the liquid oil lowers the overall melting point so the fat remains workable and melts cleanly in the mouth.
For puff pastry or croissant applications, a higher share of stearin gives the layered fat the strength to stay separate from dough. For cake and creaming applications, an emulsified shortening may include monoglycerides to help incorporate air and water. Blends can also be interesterified, which rearranges fatty acids to create a smoother melting profile without relying on partial hydrogenation.
What buyers should check
Focus on the solid fat content curve rather than a single melting point. SFC readings near 10°C, 20°C, 30°C and 35°C describe how the fat behaves through mixing, proofing and eating. Ask for:
- Slip melting point and iodine value to confirm the hardness and unsaturation range.
- SFC at key temperatures to verify the fat is not too brittle when cool or too soft when warm.
- Free fatty acid, moisture, peroxide value and colour to confirm refining quality and shelf stability.
- Whether the product is an interesterified blend, which can deliver a smooth, trans-free melting profile.
- Certification status if your contracts require segregated or mass-balance palm.
Handling notes
Keep palm-based shortenings in a cool, dry, odour-free area and avoid wide temperature swings, which can encourage crystal changes and a grainy or separated texture. Rotate stock and follow the supplier’s tempering guidance when a product has been chilled.
