Fractionation is the process that separates crude palm oil (CPO) into two distinct products: palm olein and palm stearin. Understanding this separation is essential for buyers because each fraction has different physical properties and applications.
What Is Fractionation?
Fractionation is a controlled crystallisation and filtration process. The CPO is cooled to a specific temperature, causing the higher-melting-point triglycerides to crystallise. These crystals are then mechanically separated from the liquid fraction. The liquid portion is palm olein; the solid portion is palm stearin. The process does not use chemicals—only temperature control and physical separation.
Key Physical Differences
- Palm olein has a lower melting point (about 18–24°C) and stays clear at room temperature in tropical climates. Its iodine value (a measure of unsaturation) is typically above 56, reflecting a higher proportion of unsaturated fatty acids.
- Palm stearin has a higher melting point (about 44–56°C) and is semi-solid to solid at room temperature. Its iodine value is generally below 48, indicating a higher saturated fat content.
The exact properties depend on the fractionation conditions and the quality of the crude oil. Buyers often request specific iodine value ranges or slip melting points to match their application.
Why Buyers Care
Procurement managers select olein or stearin based on the end product’s required texture, stability, and processing behaviour.
- Palm olein is widely used as cooking oil, frying oil, and in salad dressings because of its clarity and stability at high temperatures. It is also a base for margarine blends.
- Palm stearin is favoured for solid fats such as shortening, pastry margarine, and cocoa butter substitutes. It is also used in soap manufacturing, candle wax, and biodiesel feedstock because of its hardness and oxidative stability.
A buyer who orders the wrong fraction may encounter issues: olein that clouds in cooler storage, or stearin that is too hard for a baking application. Understanding the fractionation process helps avoid costly specification mismatches.
Procurement Considerations
- Specifications matter: Always request the typical fatty acid composition, iodine value, and melting point from your supplier.
- Seasonal variation: CPO composition can shift slightly between wet and dry seasons, affecting fraction yields. Reliable suppliers will maintain consistency through blending.
- Logistics: Olein can be stored and transported in standard tanks at ambient temperature in most warm regions. Stearin may require heated storage or insulation to keep it pumpable.
